VEGETABLE BIRIYANI
INGREDIENTS:
1.mint leaves - 1 cup
2.cinnamom - 2
3.green cardamom - 1
4.fennel(sombu-perunjeeragam)-2 tsps
5.clove-1
6.basmathi rice-2 cups
7.coriander leaves-1/2 cup
8.curd - 3 large tsps
9.carrot - 1/4 cup
10.beans -1/4 cup
11.potato-1
12.peas-1/4 cup
14.large onions -2 (chopped thin vertically)
15.large tomatoes -2 (chopped into small cubes nicely)
16.gingergarlic paste -2 large tsps
17.green chilli-1
18.chilli powder - 2 large tsps
19.turmeric powder- 1/2 tsp
20.salt as required
21.oil-3 large tsps
22.water-4 cups

PROCEDURE :
1.Heat oil and add fennel,clove,cardamom,cinnamom,bayleaf and green chilli .
2.Add the mint leaves and cook for two min.
3.Add the onions and cook till it turns golden.
4.Add gingergarlic paste and cook for a min.
5.Add the vegetables and mix it well .
6.Add the tomatoes, smash them well and cook till the raw smell goes.
7.Add chilli powder,turmeric powder,garam masala and mix everything properly.
8.Add curd and salt.
9.Add coriander leaves.
10.Add rice and water and then pressure cooker it.
11.Pressure cook it for 10 min in medium flame ,3 min in low flame but make sure whistle is not released.
12.Remove it from the flame,wait till the pressure gets down and remove the cooker lid.

13.Serve it hot with onion/bundhi raitha.
